Maison Ferrand Owner and Master Distiller, Alexandre Gabriel works closely with distilleries across the Caribbean and America’s crafting rums, they are left to age in warm Caribbean cellars for the initial part of their life. During the secondary process, the rums are exported to Cognac where they undergo a series of age old Cognac making techniques. This centuries old application is known by the French as ‘elevage’ and the process used is unique to Plantation. Vibrant, full flavoured Caribbean rums, finished with French finesse.
Fiji 2004
Plantation Master Blender Alexandre Gabriel has made it his lifes mission to explore the terroirs of rum, from its birthplace in the Caribbean to the furthest reaches of the South Pacific. Aided by Rum Co. of Fijis Master Distiller, Liam Costello, Alexandre meticulously selected just 18 casks of a 2004 vintage column still rum filtered through coconut carbon. Aged in the tropics for 17 years before journeying across two oceans, this formidable Viti rums journey ends in the southwest of France, with four-years of maturation in Ferrand Cognac casks.
Tasting Notes
Alexandres choice bursts with power, structure and just a hint of smoke. Intense coffee, vanilla and fudge notes intertwine on the nose, followed by fruity and spicy tones, brightened by citrus peel and deepened by tobacco. The extra-long finish lingers with cherry, cloves and cocoa.
