This diversity in terroir requires a very long harvest (around 3 months), and the grapes are added to concrete eggs to ferment in a piecemeal fashion, as they’re harvested. This slow fermentation process and subsequent 2 year aging on the lees extracts a remarkable depth of flavour and purity from the grapes, producing a sophisticated wine that is hard to rival. It has a charming bouquet of sea breeze, honey, wildflowers, flint and wet pebble, with a concentrated and salty set of flavours on the palate, evocative the sunny island it is from with notes of stone fruits, pithy citrus and summer hay.
La Palma, the northwesternmost Canary Island, is a remarkable island known for its striking altitude variations and diversegeological landscapes, making it a fascinating historic viticultural hotspot. Its isolation has meant that the vineyards were mostly sheltered from the phylloxera infestations that wiped out almost all European vines in the early 20th century, meaning the island has many vines dating back all the way back to the 1800s. Victoria Torres Pecis is now the fifth generation of her family’s winemaking legacy, and maintains 7 hectares of vineyards planted with native Canary Island grape varieties. With a focus on organic and low-intervention winemaking, the production is limited and highly sought after, andVictoria’s wines achieve a level of purity and intensity that very few can match.
