This wine was crafted with barbecues in mind. Its the ideal companion to homemade burgers, sticky spare ribs, or even smoky grilled vegetables. Serve slightly below room temperature, around 1618C, to let its flavours shine.
The vineyards for this Shiraz climb the rugged foothills of the Swartland mountains, thriving in sandstone and alluvial soils. The hot, dry conditions force these unirrigated vines to work hard, producing low yields of intensely flavoured, small berries.
Using only free-run juice, the wine is fermented on the skins in stainless steel tanks. A portion undergoes whole-bunch fermentation, where the ripe stems contribute to the wines tannin quality. The remaining grapes are destemmed and pressed. Delestage is performed after a third of the sugar ferments, drawing the wine off to incorporate air and intensify its fresh, fruity, and spicy aromas. This meticulous process showcases the varietals character beautifully.
