La Vicomt was formed in 1977, and is located in the heart of the Languedoc region, between the towns of Bziers and Montpellier, with vineyards stretching out over a hilly area, illuminated by the southern sun. Their 1,200 dedicated winegrowers cultivate more than 7,500 hectares of vines, over 4 appellations.

Taking advantage of a Mediterranean climate, dry and arid during summertime and mild in the winter, La Vicomt harvest the most beautiful varieties of grapes such as Sauvignon, Chardonnay, Cinsault, Grenache, Merlot, Pinot Noir and many others, grown on hilly terrains fed by sediments of the Hrault River, but also on more calcareous soils such as the Villefranchian terraces and semi-slopes.

Produced under the HVE3 environmental charter and in Organic Agriculture, these fresh, fruity and easy-to-drink vegan wines offer the promise of a gustatory experience that favours moments of conviviality and sharing.

Vinification

La Vicomt cultivate their Cabernet Sauvignon in compliance with High Environmental Value (HVE3) specifications : low use of chemicals, respect of the biodiversity and control of the water usage.

Vine age 20 years old.

La Vicomt wines are vinified by their four cooperative cellars, members of their union: Saint Bauzille de la Sylve, Le Pouget, Puilacher and the Saint Pargoire cellar. As the 2nd largest union of wine producers in the Languedoc, La Vicomt apply strict and rigorous vinification protocols for all wines.

Traditional winemaking using modern techniques. A short maceration for 4 to 6 days then the rest of the fermentation is done on the juices only, using full thermovinification. The Cabernet then spend a short time aging in concrete vats, before being bottled and released.

Tasting Notes

This Cabernet Sauvignon, with its deep, brilliant ruby colour, is rich and concentrated. Its fruity (ripe fruit), vegetal nose is typical of the variety. The attack is frank, the palate structured, aromatic, round and silky.

This well-structured Cabernet Sauvignon is a perfect match for red meat (duck, lamb) and game. Its smoothness and elegance take precedence over its power, and it can easily be paired with poultry.
