COS are situated in the province of Ragusa, a collaboration between three friends – COS comes from the first letter of each of their three last names. They follow the principles of biodynamic farming and use terracotta vases for vinification to leave no aroma or flavour trace from the vessels. They are responsible for putting this area back on the map in terms of wine-making through sticking to their rigorous practises, producing top quality wines.
Pithos Bianco issupple and savoury with some floral notes that meld into white and yellow stone fruits, peaches and herbs. There are some saline notes and the wine is underpinned by excellent freshness and acidity. It also benefits from relatively low alcohol.
