From a gastronomic point of view, it prefers boiled, braised, roasted meats, noble poultry and mature cheeses.
Harvested by hand in the first ten days of October, its grapes, once destemmed in a soft way, undergo a maceration of about 14 days. During this period the wine also completes the alcoholic fermentation at a temperature not exceeding 20C, to then be introduced into barriques, where the malolactic fermentation ends. It is then subjected to a further 6 months of refinement in wood and to rest in the bottle.
