This element of exploration and a willingness to take risks is exactly what our Founders Collection represents. With Nevallier, I set out to explore how bourbon could be transformed by French Oak and the result is a whiskey that is completely unique in relation to the other whiskeys I have produced. Nevallier nudges bourbon past its traditional borders and it is my hope that this one-of-a-kind spirit expands the perception of bourbon among those who have a deep appreciation for fine whiskey.
For this limited release, we took an exceptional 15-year-old Kentucky Straight Bourbon and finished it for one year in new French Oak barrels sculpted by the virtuoso artisans of Tonnellerie Leroi, one of Frances most renown cooperages. The exquisite bourbon that has emerged from these barrels is as luxurious in taste as it is in appearance.Bourbon is the quintessential American Whiskey. A storied spirit whose French roots have been strong since its inception over two centuries ago. This 16-year-old Limited Edition Rabbit Hole Founders Collection expression is an homage to bourbons French connection. Finished in new French Oak, Nevallier Kentucky Straight Bourbon Whiskey is named for the two forests in France, Nevers and Allier, from which the distinctive wood for the barrels was sourced.Nevallier Tasting Notes
Auburn color highlights Nevalliers strong character while fragrances of custard, orange, cherry, and caramel raise expectations. On the palate, it delivers an earthy opulence balanced with an intricate dance of tobacco, vanilla, fig, blackcurrant, spice and cinnamon, which culminate to a long dramatic finish with intense spice and floral notes.
