Delheim Chenin Blanc Wild Ferment presents a vibrant pale straw colour with a hint of green. The nose is a delightful bouquet of barley, apricots, peaches, and tropical fruits, all underpinned by well-balanced acidity and subtle oak flavours. On the palate, citrus notes emerge, lingering beautifully on the aftertaste, creating a refreshing and memorable experience.
Craftsmanship
Crafted with a natural approach, this wine showcases the fruit from the oldest Chenin Blanc block on the farm. Grapes are handpicked in the early morning to preserve their freshness and kept at low temperatures. After de-stemming and gentle crushing, the juice settles for nearly two days at cold temperatures before being transferred to barrels and concrete egg-shaped tanks for fermentation. Spontaneous fermentation, without the use of commercial yeast, allows the wine to express its unique character and the essence of Delheim’s terroir.
Following fermentation, the wine matures on its fine lees for nine months, receiving a light filtration and minimal sulphur before bottling. It is then stored at an optimum temperature for an additional year of bottle maturation, ensuring depth and complexity.
