A redwood forest is a perfectly balanced ecosystem where every element works in harmony. The grandeur of the redwoods can be experienced throughout the Northern California backyard of Sonoma County.
The distillery itself is in the heart of the Russian River Valley wine region. It was carved out of the buildings originally housing an apple canning and processing plant owned by the Hallberg family, one of the areas preeminent families during West Countys apple production heyday. The Hallbergs were known for producing a wide variety of apple products, mainly under the Redwood Empire label. Today, the facility and the climate make this the ideal place to make great whiskey.
Each whisky in the range is named for an iconic Redwood tree and features unique and disruptive woodcut art depicting different caricatures of John Muir, known as the Father of the USAs National Parks. John Muir was an influential naturalist and early advocate for the preservation of the American wilderness.
Pipe Dream Bourbon
Named for the 14th tallest tree on the planet, Pipe Dream is the distilleries first Bourbon whiskey. Pipe Dream Bourbon is made from barrels aged between four and twelve years with a high corn mash bill. Smooth and complex, it is a true sipping whiskey.
75% Corn, 21% Raw Rye, 4% Malt Barley
Tasting Notes
Nose: Powerful nose with sweet maple, vanilla, and a hint of honey.
Palate: Rich, deep and complex with roasted pecan, vanilla, and lingering char and woody notes. Smooth with a hint of black pepper on the finish.
Finish: Maple syrup, marmalade, and cedar.
