The Chateau du Cedre Cahors is inky, spicy red wine endowed with red and black fruits and smoked fig and liquorice flavours.
The Chateau du Cedre Cahors is a mixture of new and old oak, the top cuves are made from low yields and old vines on the estate.
The grape variety here is Malbec (also known locally as Auxerrois), supplemented by smidgens of Merlot and Tannat.
If you think that Chateau du Cedre Cahors is just brushing your teeth with tannin-flavoured twig juice, think again!
Pascal Verhaeghe has been the driving force behind the Cahors Quality Charter and quality oozes from these wines.
The estate was originally created by Charles Verhaeghe on vineyard land devastated by the frosts in 1956 in Vir-Sur-Lot.
His sons Pascal and Jean-Marc duly studied winemaking, the former in Burgundy and California, the latter in Bordeaux.
Ecological viticultural methods eschewing weedkillers and chemical fertilizers, yield reduction by serious pruning, leaf stripping for greater sun exposure and air circulation, harvesting the grapes on the verge of overripeness yield the superb raw material essential to create fabulous wines.
In the cellars the Verhaeghes aim for softness, richness and harmony through gentle extraction by long vattings and limited pigeage, malolactic fermentation and sensible use of oak. chateauducedre.com
We do organic farming. Weve started in the early nineties by banning all herbicides from the vineyards and managed to get rid of all chemical spraying agents by 2002. This really improved the quality of our grapes and encouraged us to ask for organic certification in 2009. After three years of conversion, we have made our first certified organic wine in 2012.
“We work our vineyards and cellar with care and accuracy, using experienced and appropriate techniques since 1988. We use to express our modesty towards every vintage by the leitmotiv learn and unlearn. Even if we have somehow domesticated our terroir et adapted our proper rules due to a better understanding of our region (the Lot), of Malbec and Viognier and of the micro-climate of our vineyards, our approach to wine making remains empirical and each vintage is a new creation.”
