Made from 100%Muscat Blanc Petits Grains, multiple pickings take place in each vineyard plot to obtain only perfectly ripe grapes. The hillsides of Beaumes de Venise and the plain are protected from the strong Mistral (North) wind by the contours of the Dentelles de Montmirail. They face south and are thus well exposed to sunlight. The soils are composed of soft limestone with sandstone zones and sandy molasses. Alcoholic fermentation starts slowly, with the temperature never exceeding 15C. When the residual sugar level is reached, a fortification is carried out by the addition of alcohol, stopping fermentation.
Golden yellow with a steady and brilliant colour, this is powerful, rich and elegant, with aromas of candied fruits and flowers on the nose. Well-balanced, with a great length and a good and steady aromatic persistency on the palate.
Serve chilled at 6C-8C withsorbets, fruit salads, and chocolate desserts, or serve slightly less chilled with mild, blue and matured cheeses.
