The Franois Carillon Cap au Sud Chardonnay is a white wine of superb value produced from grapes sourced from the Languedoc region of France. In 2021 the winemakers in Burgundy were dismayed to find that the yields throughout the region were far lower than expected. So, unwilling to leave empty the many barrels he had set aside, Franois Carillon took action and decided to purchase Chardonnay grapes from the Languedoc region and age it in Puligny Montrachet barrels.The wine was fermented in barrel for about twelve months, during which time it was matured on the lees, to give it roundness and texture. It spent an additional six months in stainless steel vats to give it crispness and clarity. With Franois knowledge and knowhow the resulting wine has wonderful minerality and acidity, balanced richness and a delicate, controlled use of oak. The result is a Chardonnay that is both subtly complex and eminently drinkable.
