Slightly chill before serving Gonzalez Byass Del Duque VORS 30 year old. Present in a smallwhite wineglass in order to appreciate the full bouquet of aromas. Enjoy Del Duquesherryon its own or with dishes such as seafood, rice and small game.
Gently pressing the palomino grapes for Del Duque which begin life as Tio Pepe Fino. Following fermentation to 11-12% alcohol thewine is fortifiedto 15.5% alcohol and then enters the Tio Pepe Fino Solera.
The alcohol, temperature and humidity in the cellars helps a layer of yeast known as flor to form on the surface of the wine. This flor protects the wine from oxidation and gives it its unique aroma and character.
The wine remains under flor for a minimum of 4 years. It is then moved to a young amontillado solera for a further 6 years while the flor naturally dies off.
At roughly 10 years old the wine enters the Del Duque Solera where it will remain for a further 20 years in complete contact with the oxygen. Due to its more than 30 years of aging it enters in the category VORS.
