Idle Assembly is a skilled blend of rums aged between five and twenty years in white oak casks that have previously held American Bourbon and represent a tour of the Caribbean in a bottle from the finest producers and ingredients; aged rums from Trinidad and Tobago, the Dominican Republic, Venezuela, and Panama.
While maturation has taken place across the Caribbean where notes and nuances are first developed it is the microclimate of Barranquilla that lends its heat and humidity to the ageing process, producing the character and softness of the rum.
The result is a limited production rum rooted in the traditions of Hispanic rum making. Molasses fermentation, column distillation, aged in white oak bourbon for between 5 and twenty years, in a unique microclimate. The final product, Idle Assembly Rum, is dry, oaky, smooth, and characterful, with no added sugar or colouring, gently rounding on the palate, appealing to connoisseurs and first-time rum drinkers alike.
Tasting Notes
Nose: The aroma leads with a light ginger note with orange blossom, toasted coconut, and added depth of oak spices, bergamot and sandalwood. Medjool dates and a hint of white chocolate, with a lightly floral overtone backed by Palo Santo wood.
Palate: The palate gives an initial note of Maraschino cherries, orange sherbet and clove. Some light toffee notes appear, supported by a backbone of nutmeg, cinnamon and Madagascan vanilla. Rose water, fig leaf and light honey notes complete the complex profile of this delicious rum.
Finish: The finish has a light biscuit note, ripe banana, cocoa nibs, liquorice and cigar tobacco, with a hint of toasted almonds and cherry Bakewell tart.
