Stefano Inama feels the key to making great Soave is Working with old vines from the best plots and this is one of the plots that dates back to when his father bought the vineyard in the 1950s. Foscarino is Inama’s interpretation of the old-style Soave Classico that looks back to ancient times. Garganega grapes are hand-selected from old, south-facing vines grown on basaltic-volcanic soil ofthe Monte Foscarino, and only pre-used barrels and minimal winemaking techniques are used to showcase the fruit.

The label depicts two heads inspired by those initially drawn by the English architect Inigo Jones (1573 1652). This ‘concept’ label has taken on such importance it has become Inama’s company logo: the expression of two faces, which originally referred to love, represent the two faces of wine, the sacred and meditative one on the right and the more profane, and inebriated one on the left!

On the nose, this is fresh and mineral, with fragrant field flower notes; camomile, elderflower, iris. On the palate it is rich, complex and multi-layered with an almond finish. Over time, these notes will evolve into even more complex aromas of pollens and dried flowers.

The recommended food match is a classic vitello tonnato (veal with tuna sauce) and signature Venetian dishes such as baccal alla vicentina – a dish of salted cod, onions, anchovies, milk, and Parmesan – served with polenta. If that doesn’t tickle your tastebuds it pairs equally well with fish stews, sushi, risotto, asparagus dishes, and Italian cheeses such as Monte Veronese (aged cows milk cheese).

Serve at 8C-10C (i.e. remove from the fridge about half an hour before serving).
