Tasting Notes
Zero Dosage represents Methode Cap Classique in its purest form, allowing the grape, site and vintage to truly shine. The grapes were sourced from a single vineyard and hand harvested before whole bunch pressing using the champagne method. Post fermentation, the wine is matured on its primary lees for 3 months prior to racking when the wine is then allowed to slowly ferment and mature in the cellar for 12 years prior to disgorgement. The nose invites a vibrant bouquet of peach, almonds and exotic spice, complementing a palate of stone fruit, brioche and a lingering, pleasant mousse.
Food
Due to its lengthy bottle maturation, the wine is complex and layered. The vibrant acidity and linear minerality means this wine can be seamlessly paired with almost any food.
Region
The Western Cape is roughly the size of Greece and is the fourth largest province in South Africa. A temperate southern coastline is fringed by mountains whilst the north meets up with the Karoo plateau. The west coast of the province is extremely dry and windy. Two oceans meet on its coast; the cool Atlantic on the west and the warm Indian Ocean on the south coast. The weather is perfect for growing grapes – rainfall measures up to 40 inches a year, the mild Mediterranean weather provides the perfect climate and the ground is mainly sandy and rough.
Producer
They call themselves Rebels of the Vine and are pushing the boundaries of a traditional industry and having fun with their wines as seen by their labels. Based in the quaint village of Franschhoek, Kevin, Jacques and Raymond came together to combine their diverse skills and creativity to make great wine. They took inspiration from their surnames to become the Black Elephant Vintners – Swart and Ndlovu become `Black Elephant` and Jacques is the Vintner! Their wines are inspired by good tunes and they firmly believe that music and wine make the best pairing – far from traditional and very Rock n Roll!
