Pomology was founded in 2022 by Iona and Craig. After a time as Head Distiller in a Norwegian whisky distillery and seeing the positive affects that terroir can have on the flavours of a final product they returned to Scotland to start their own adventure.
Where better to set up this business than the central location of Perth. Famous for having highland hills to the west feeding into rivers and lakes and vast berry fields to the east.
There most likely will be differences in the batches produced each year due to the variedsoil, topography and climate of Perthshire resulting in a truly wild Scottish flavour experience.
