Established in 1989 by Martin Shaw and Michael Hill Smith, Shaw + Smith’s aim is to make contemporary, high quality wines that stand amongst the best of their type in Australia. The wines are made exclusively from fruit grown in the Adelaide Hills, South Australia, one of Australia’s coolest and most exciting regions. Shaw + Smith specialise in grape varieties suited to the cooler climate, such as Sauvignon Blanc and Chardonnay and also make fantastic wines from Shiraz and Pinot Noir. Their wines consistently win medals and trophies at international wine competitions.
Vineyards
Grapes were sourced from selected sites throughout the Adelaide Hills with the core of the blend coming from Shaw and Smith’s own vineyards at Balhannah, Woodside and Lenswood. Generally soil structures in the region are shallow, red/brown loam over schist and clay. High density vine planting with an average of 2,700 vines per hectare, cane pruned and with vertical shoot positioned canopies.
Vinification
All the grapes were hand-picked to ensure the grapes were in pristine condition upon arrival at the winery. This ensured no oxidation or skin contact, resulting in less need for the use of SO2. Whole bunches were destemmed, crushed, chilled, gently pressed and then underwent cool fermentation in temperature controlled stainless steel vats. The wine was matured on the lees for a short period and was bottled early under screwcap to retain crispness.
Tasting Notes
Bright and aromatic with notes of grapefruit, nashi pear and nettles. On the palate there is intense flavour with fresh, limey fruit, mouth-watering acidity and remarkable purity.
Drink with pea and white wine risotto.
