Tsarev Brod winery is located in the village of Tsarev Brod near the town of Shumen, very close to the only rock lay in Europe Madara Raider which is an object of cultural and natural heritage of UNESCO. The project for the winery started in 2001 when the family of agronomists planted the first hectares of vines there.
Being people close to the land they realized that to build a cellar and buildings is easy and fast but vineyards need more time and systemic care. After eight vintage campaigns their grapes from Sauvignon Blanc, Traminer, Chardonnay, Riesling and Pinot Noir were tested with various winemaking techniques by a lot of Bulgarian wineries and winemakers whose opinion was all very positive. Then when in 2015 the vineyards reached its optimal maturity the family owners joined forces with Nikolay Krastev, one of the leading winemakers in Bulgaria to produce their wines. Nikolay was closely following the development of the vineyards all these years and knows inside out its technological characteristics. Also a modern winery was built right next to the vineyards.
Vinification
The grapes for the wine were picked at the end of December in a semi-iced condition. They were then frozen completely, in order for the water in the grapes to be locked in and only the concentrated grapes must to be extracted for fermentation after gentle pressing. After fermentation the wine is aged for 12 months in used French oak barrels.
Tasting Notes
Beautiful golden colour with amber hues. Sophisticated and very tempting aromas of fig jam, dried flowers, raisins, orange peel, apricot, quince and honey. Very good balance between the sweetness and the acidity, great noble development and lovely long finish with notes of bee wax, honey and acacia.
