The stark contrast between land and sea is the inspiration for Whitby Gins botanicals along with the packaging and design.
Heather Flower is collected in collaboration with the North York Moors Authority during June – September. Whitby Gin also work with SeaGrown a seaweed farm based 5 miles offshore from Scarborough to gather forgotten flavours from the sea including sugar kelp and pepper dulse. Yorkshire Honey is one of the key ingredients and makes it’s way in to a number of different Editions.
You may notice a pearlescent glow when tonic or ice is added to Whitby gin. It can go from clear to cloudy because of the flavoursome oils released from the botanicals. This can happen because they choose not to chill-filter the gin. To do this would remove the oils and in turn reduce the bold flavour.

Juniper, coriander seed, citrus peels and Liquorice Root. Along with Heather tip, Yorkshire Moors Honey and Sugar Kelp, pepper dulse. The Dry Gin is steeped with Yorkshire forced rhubarb with a touch of sugar to balance the acidity.

Your taste buds are awoken with a hit of sweet Rhubarb followed by crisp juniper notes.
